Grilled Vegetable Couscous Salad

This is one of those fool-proof easy summer salads that can stand alone as a delicious side dish or with the addition of grilled chicken or steak, can make for a hearty meal. Another advantage of this yummy dish, is that it tastes great served hot, at room temperature or chilled. And it’s a good way to incorporate all those overflowing summer garden veggies!

Grilled Vegetable Couscous Salad

1 1/2 cups prepared, whole wheat couscous
2 zucchini
1 yellow squash
4 green onions
1 pt cherry or grape tomatoes
1 lemon, juiced
1 orange, juiced
1/2 cup extra virgin light olive oil
3 tablespoons whole grain or dijon mustard
3 tablespoons red wine vinegar
1 shallot, minced
1 clove of garlic, minced
salt and pepper

In a bowl, combine citrus juices, olive oil, mustard, red wine vinegar, shallot and garlic. Stir to combine. Add salt and pepper to taste. Set aside. Cut zucchini and squash lengthwise into quarters. Arrange in a shallow dish and pour 3 tablespoons of the vinaigrette over the tops and mix to coat evenly. Let marinate 30-45 minutes. Cut green onions into small dice and halve the tomatoes. Place into large serving bowl and set aside.
Heat grill, then proceed with grilling the zucchini and squash until cooked through. Chop into 1/2 pieces. Then add the grilled vegetables and the couscous to the large serving bowl with the tomatoes and onions. Pour desired amount of vinaigrette over everything and stir to combine.
Salt and pepper to taste.

Other great additions to this would be grilled sweet corn, red onions, asparagus, or eggplant. Feel free to use any vegetables you have on hand and enjoy!

    Heather, the orange sounds like a wonderful addition. I would love to try that. It sounds so delicious. I would have a hard time getting my meat and potatoes husband to taste it. Oh well, more for me.

      Haha! I’m married to a meat and potatoes guy too….just serve him a grilled steak next to it. 😉
