Cinco de Mayo is this Sunday, so I thought I’d share my best salsa recipe with you! I’ve made dozens and dozens of salsas over the years, and never felt like they were quite right. But that’s over now, because this one was a huge hit. It’s sort of a cross between a salsa and a pico de gallo, the best of both worlds! Be sure to stock up on plenty of tortilla chips…this one will go fast!

Heirloom Tomato Salsa Fresca

2 lbs heirloom tomatoes, assorted varieties**
4 green onions
juice of 1 lime
1 jalapeño, seeded and finely chopped
8 oz. can tomato sauce
1 garlic clove, minced
1/2 tsp salt
1/4 c fresh cilantro, roughly chopped

Chop tomatoes into 1/2″ pieces. Cut the green and white part of the onions, into 1/4″ pieces. Add to a mixing bowl. Combine lime juice, jalapeño, garlic clove, cilantro, and salt. Pour in tomato sauce until it reaches your desired consistency. Less sauce will create a chunkier, pico de gallo style. I typically use 3/4 of the can.
Using an emersion blender, pulse salsa mixture about 6 times, making sure not to over blend. If you prefer to use a blender, add one cup of salsa mixture to blender and pulse a few times, return to mixing bowl and combine. Chill in refrigerator for 30 minutes. Transfer salsa to a serving bowl and top with a few leaves of fresh cilantro and a slice of lime.

**If you don’t have access to heirloom tomatos, try using a variety of store-bought ones. Plum or Italian tomatoes, fresh on-the-vine tomatoes, and yellow cherry or grape tomatoes, are good choices. The variety is what makes this salsa special and gives it such beautiful color!

    But I thought Saturday was Cuatro de Mayo? 🙂 Normally we like to do a little something for Cinco de Mayo but it looks like much of my crew has to work this Sunday… asi es la vida! (such is life) We will make do and have our own festivities Saturday evening after all! Depending on the weather we might even be able to have dinner al fresco! Have a wonderful weekend!
