Goodness, this salad is delicious. It’s light, refreshing, and tangy, thanks to it’s vinaigrette dressing and spicy arugula. I made this for lunch the other day and went outside to enjoy the fresh air and beautiful weather on the patio…all alone. It was perfect.
Please make this for yourself. The recipe only makes a single serving. I suggest you treat yourself kindly and have it outside too. I promise you will enjoy every moment and bite!

Orange, Avocado & Arugula Salad

2 handfuls fresh arugula, washed
1 orange
1/2 avocado
1 slice of thinly shaved red onion
6 walnut halves, toasted and chopped
2 tsp red wine vinegar
2 tsp good quality olive oil
1/4 tsp stone ground mustard
1/4 tsp crushed garlic cloves
pinch of kosher salt and cracked black pepper, each

Arrange arugula on a salad plate. Cut orange top and bottom off. Peel, by cutting skin away from orange. Slice orange horizontally. Slice avocado into wedges. Place orange, avocado, and thinly sliced onion on top of greens and sprinkle with toasted walnuts. In a separate bowl, mix olive oil, vinegar, mustard, garlic and salt and pepper until combined well. Drizzle over salad. Enjoy!

    The salad looks lovely and I will definitely try it, however I will give the eating it outside a miss, I come from the U.K and we are having the worst cold weather since 1963! Brrrrrrrrrr.
