Pumpkin Cookie Recipe

If you’re looking for the best Pumpkin Cookie recipe, here it is!
They are sooo delicious, I promise.

                        Pumpkin Cookies with Cinnamon Glaze

                                       1 c. pumpkin
1 c. butter, softened
1 c. sugar
1 tsp. vanilla
1 egg
3/4 tsp. salt
1 tsp. baking powder
1 tsp. baking soda
1 tsp. cinnamon
1/8 tsp. nutmeg
2 1/4 c. flour

Preheat oven to 350. Mix wet ingredients together until well blended. In a separate bowl combine the salt, baking powder, baking soda, cinnamon, nutmeg and flour and then add to the wet ingredients. With a small ice cream scoop, drop onto cookie sheet and bake for 13-14 minutes.

For the Cinnamon Glaze,  I use about 1 1/2 c. powdered sugar, 1 Tbs. softened butter, and milk until it has a nice smooth consistency. After it is thoroughly combined I stir in a pinch or two of cinnamon. Drizzle glaze over cooled cookies and Enjoy!

Now seriously, get yourself to the store to fetch these ingredients. I promise you will love these cookies. Your children will adore you and your husband will remember why you were such a great catch! And if you’re lucky there might be one or two left for you.

    OK, Heather……I changed my mind.I did make the cookies BEFORE church and my hubby and sweet daughters LOVED them so I gave out a few to friends.I tried one and then wow, 2, 3, 4 I couldn’t stop.Now I need to make more today to use up the pumpkin and of course to show them that I did not eat them all.They are so yummy and in a few of them I put in some chocolate chips, oh my heck they were scrumptious.PLEASE, more yummy recipes like that and some more beautiful decorating.

    I happened to have a can of pumpkin in the cupboard and after rushing to the supermarket in my pj’s to buy some of the additional ingredients i made up a batch on Sunday evening and as everyone else agrees they were fantastic.
    I left them with a friend to take into work the next day otherwise I fear my diet would’ve gone out of the window!
