Easy Frittata Recipe
What’s for dinner Heather? Well since you asked I’ll share with you a recipe for the most delicious and easy frittata you’ll ever make. I found the recipe right here and happened to have all the ingredients on hand. Minus one egg but even with only 5 eggs it came out perfect.
It’s very good served warm with a crisp salad but could easily be served at room temperature as an appetizer. And I think it looked just as good coming out of the oven in it’s cozy cast iron pan.
Suppose there’s no reason to ask what’s for breakfast tomorrow. Hope you try it for yourselves, it’s so yummy and couldn’t be any easier!

I have tasted something similar with sliced potato, not pre-cooked which surprised me, but absolutely perfect.

Frittata is my emergency lunch or dinner! My nonno’s made the best, his secret was a little bit of milk with the eggs and parmiggiano . I actually had leftover pot roast the other night and made a frittata out of it! Hope everything is well. Ciao Rita mammabellarte

There are so any entertaining occasions that call for a quick preparation.
I would imagine your recipe is tastier with fresh eggs from your chickies.

This Frittata looks yummy! Love seeing how the chickies have grown ~ they are so sweet. Also I wanted to comment on your beautiful buffet (a few posts back) for the “Lunch Ladies”…so pretty and I know those ladies loved seeing the “chicken coop” and your babies, but the lunch must have really been the star! Heather! I love a recipe that covers two bases: dinner AND breakfast the next day! My kids will love this. I usually save leftover potatoes and veggies to make a breakfast version, but the pasta is a wonderful new twist. And believe me, they can eat pasta ANY time of the day.

I made the frittata for dinner last night and served at room temp with a nice baby green salad. Also served my kids the pumpkin cookies this afternoon. We are all home for the long weekend and loving the time in the kitchen with family around. Thanks for the inspiration to try something new.

I made this tonight for dinner. I halved it, though, for just the two of us. It was great! Served it with a mixed green salad with strawberries, blueberries and feta. YUM!
